I first saw this on Pinterest and thought ‘I MUST MAKE THIS!’ and that’s exactly what I did. It’s super easy and you can make so many different variations. On this particular occasion I made a cheesy mushroom & spring onion pull apart bread.
All you need is:
1 Sourdough or French Boule loaf/bread
1 pack of Mature Cheddar slices
Handful of mushrooms, chopped
4 Spring Onions, diced
1 tsp of dried Tarragon
1 tbsp of Vegetable Oil
Salt & Pepper to season
1) Make the filling by cooking the spring onions in the oil. Add the mushrooms, tarragon and then salt and pepper to taste. Cook until softened.
2) Whilst that’s cooking, slice the bread in 1 inch thick strips without cutting all the way through to the bottom. Turn it sideways and repeat to look like a checkerboard.
3) Cut the cheese in 1 inch strips and place them in between the gaps. You can also use grated cheese, which will probably melt quicker and more evenly.
4) Fill in the gaps using the mushroom mixture you prepared, making sure to push as much of it down to the bottom as well.
5) Cook in the oven for 25-35 minutes at approximately 200°C until the outside is golden and the cheese is soft/melted.
I have made this several times now, each time with different fillings. It can be a cheese combo, or you could use sun-dried tomatoes and olives, but my next version is definitely going to be with cheese and pesto! YUM!
